AMARO
The history of Amaro can be traced back to ancient civilizations, including the Egyptians and Greeks, who used herbs for medicinal purposes. Monks in monasteries also played a significant role in the development of herbal infusions for both health and enjoyment. Amaro is made in stages.
Stage 1 ingredients
7 grams Orris Root
3 grams Chamomile
7 grams Juniper Berries
4 grams Fennel seeds
3 grams Allspice
1 Clove
a pinch of cinnamon
3 1/2 Cups vodka
Stage 1 instructions
Place all the above listed ingredients in a quart jar with a lid and infuse for one month. After a month strain out solids and run through a sieve. Discard solids.
Stage 2 ingredients
Add to the above mixture
3 1/2 Cups of red wine
30 grams of Wormwood
The peel of one lemon
Stage 2 instructions
Add the above ingredients to the vodka mixture and stir, place mixture in a glass jar with a lid and store for 2 weeks.
Stage 3 ingredients
1 2/3 Cups of sugar
5 whole Orange peels
Stage 3 instructions
Combine the above ingredients and let sit covered overnight. Then add to vodka/wine mixture and let stand overnight. Strain out solids, pour through a sieve into a clean jar with a lid and let stand for another month.
